Dr Tsang is a Senior Lecturer in Human Nutrition and Health at EHU (UK). Having obtained her Masters and Doctoral (PhD) training from the Medical Faculty and the Institute of Biomedical and Life Sciences at the University of Glasgow (UK), her research interest is in the area of Antioxidants and Health. Catherine has a particular interest in the role of dietary phytochemicals and their potential as functional foods, in their ability to alleviate oxidative-related conditions, including diabetes, cardiovascular disease (CVD), hypertension and obesity.
